Focus on Cheese: Double Gloucester Onion & Chive
Welcome to the next of our Focus on Cheese articles on the Belton Farm Award-winning Cheese Range. This month we are going to looking at our traditional Double Gloucester Onion & Chive.
Double Gloucester Onion & Chive is matured at Belton Farm for around 6 months. The cheese is filled into cylindrical or rectangular moulds and pressed overnight (typically 12-18 hours) in the dairy, before being knocked out by the cheesemakers and stored ready for the maturing process to work its magic.
Our Double Gloucester Onion and Chive is a smooth, buttery Double Gloucester cheese infused with Onions and Chive. A semi-hard cheese made traditionally from the milk of Gloucester cattle since the 16th century, it is quite a powerful cheese, yet very smooth and creamy. The flavour has made it the cheese of choice for many as its almost too easy to eat!
As this cheese can be powerful, yet smooth and buttery, it is delicious when grated into a cheese sauce and served with chicken or fish. You can also enjoy it as a light snack or cubed into a salad. Its also a fabulous cheese to melt onto crumpets or toast and ideal for adding a ‘herby flavour’ to any dish.
When it comes to pairing beer with the cheese, we would recommend a Brown Ale. When pairing the Double Gloucester Onion & Chive with wine, the complex flavours demand bold partners such as a Pinot Grigio, Pinot Noir or a Châteauneuf-du-Pape. Fortified wines such as Port would also form a rather special partnership.
